For a major part of my life i was away from my home in a far away land for my higher studies. Staying in a paying guest (PG) as we all call it was included in this part, and staying there made made me realize how much i missed home-cooked food. Tiffin system was only available at that time so even after we donot want eat still we had to feed ourselves. If by any chance we skip the food then Maggie was our only support throughout the night. Cooking maggie at 1-2 am is not a new thing. Every single hostelier will know this. And since most of my friends there were vegetarians i was also forced to eat vegetarian (no offence 🙂 bura mat mano but that was also a very beautiful part of my life) , saying chicken , mutton , fish to them was like making them squeak … :O :O this was there reaction 😉 but still we manage to overcome that hurdle n stayed friends . Even now when i post something or make something the first question which pops will be is it vegetarian ???? i m like sorryy yaaar nooo…. 🙂 and they curse me throughout 😀
So today i am making this food dedication to all my vegetarian friends (everyone can eat though) … hope u all enjoy making n gorging on this yummy dish….. BON APPETIT 🙂
** For the toast :
6 slices of bread
2 medium sized potato boiled , peeled and mashed
1 medium sized onion chopped small size
1 green chilli chopped
1 pod of garlic chopped
Oil/butter for frying
Salt (As per taste)
Pepper powder-1/2 teaspoon
Chat masala- 1/2 teaspoon
Garam masala-1/ 2 teaspoon
1 teaspoon chopped coriander leaves
** For the corn and cheese gravy:
250 gms steamed sweet corn
1/2 slices of amul cheese (u can add more)
1 and 1/2 cup milk
1/2 green bell pepper diced
1 medium sized onion diced
1/2 pods garlic chopped
Butter/ Oil your preference
Salt
Sugar- 1/2 teaspoon
Pepper powder – 1/2 teaspoon
Oregano – 1/2 teaspoon
Thyme -1/2 teaspoon
Chilli flakes – 1/2 -1 teaspoon
Coriander leaves for garnishing
METHOD :
FOR THE TOAST:
Mix everything nicely mentioned in the list except the bread and oil/butter. Then take 3 slices of bread and put the potato stuffing in each slice and cover with the other 3 part bread slices. In a frying pan put 1/2 teaspoon oil or butter as u prefer then grill the sandwiches each side approx 3/4 mins on high and turn and do the same. Your sandwiches are ready. Keep aside .
FOR THE CORN CHEESE GRAVY :
In a deep pan heat oil/butter the add chopped onions, garlic and saute for 3/4 mins or till the onions are light brown . After that add the capsicum ,corns , salt , pepper , oregano, thyme, chilli flakes and fry again for 7/8 mins or till the capsicum are succulent. Now add 1 cup milk and the sugar let it boil for another 5/6 mins . Lastly add the cheese slices and give a good mix . The cheese will melt and it will become a little thick , so add a bit of milk and mix for another min or so then turn off the heat. Garnish with coriander leaves and serve with your toasts and a cup of tea/coffee .
YOU CAN SERVE THIS AS A BREAKFAST OR AS AN EVENING SNACKS. ENJOY…. 🙂
